Personalized Initial Cookies
I've made several attempts at creating these cookies. Initially, I tried a sugar-free and gluten-free version with sugar-free icing. However, the challenge I encountered was that the icing didn't achieve the level of neatness I had hoped for. Subsequently, I shifted to a regular sugar cookie with traditional icing for cookies in my second attempt, yet I faced the same issue of achieving a tidy appearance. It was only in my latest attempt that I managed to overcome this challenge by incorporating fondant, allowing me to cut it to fit the regular sugar cookie and achieve the visual outcome I had envisioned. As a result of this success, we've decided to include it in our menu for purchase.
However, a consistent challenge throughout these trials is the need for further practice in decorating the cookies with icing, not solely relying on fondant.
A recurring issue in many of my desserts lies in their visual presentation, rather than the hiccup being the flavour.
Tiramisu Packaging Test
The upcoming trial I'll be testing this weekend isn't so much about testing the recipe—it's more about experimenting with packaging for my tiramisu. Over the past 6-8 months, I've whipped up this recipe several times, so I've got it down pretty well. But now, I'm gearing up to start selling it via Instagram! I have gotten great feedback on the tiramisu as people love the packaging and more importantly love the taste of the tiramisus!
Mini Cheesecakes
I was recently asked if I could make rolo cheesecakes. At the time, I hadn't offered them for sale, but I welcomed the challenge of trying something new. While I had made cheesecakes in the past and they had turned out really well, it had been a long time since I had made them, let alone with roll in them.
1st & 2nd attempt: On my first attempt, I didn't use cupcake liners in the tray as I was making mini cheesecakes, and as a result, they stuck to the pan and were very difficult to remove cleanly. For the second attempt, I used cupcake liners, but assuming they were non-stick, I omitted using cooking spray. Unfortunately, they once again stuck to the liners, and the batter was a bit too dense for my liking.
Last attempt: For the third and final attempt, I used liners in the cupcake tray and greased them, and this time they came out of the molds perfectly. I was thrilled with the result and committed to the order. The cheesecakes were perfectly shaped and had a light, not too dense texture that was just right.
