Recipes that made the cut

Personalized Initial Cookies

I've made several attempts at creating these cookies. Initially, I tried a sugar-free and gluten-free version with sugar-free icing. However, the challenge I encountered was that the icing didn't achieve the level of neatness I had hoped for. Subsequently, I shifted to a regular sugar cookie with traditional icing for cookies in my second attempt, yet I faced the same issue of achieving a tidy appearance. It was only in my latest attempt that I managed to overcome this challenge by incorporating fondant, allowing me to cut it to fit the regular sugar cookie and achieve the visual outcome I had envisioned. As a result of this success, we've decided to include it in our menu for purchase.

However, a consistent challenge throughout these trials is the need for further practice in decorating the cookies with icing, not solely relying on fondant.

A recurring issue in many of my desserts lies in their visual presentation, rather than the hiccup being the flavour.

Tiramisu Packaging Test

The upcoming trial I'll be testing this weekend isn't so much about testing the recipe—it's more about experimenting with packaging for my tiramisu. Over the past 6-8 months, I've whipped up this recipe several times, so I've got it down pretty well. But now, I'm gearing up to start selling it via Instagram! If you're following me over at @jayabakes, you'll catch glimpses of all the desserts I offer, from menu staples to special requests available year-round. Feel free to shoot me a DM on Instagram to place an order or ask any questions you might have! Get ready to soon be able to purchase my tiramisu!  Now available for purchase! Mini number that can be ordered is 3 and is 8$ per

I have gotten great feedback on the tiramisu as people love the packaging and more importantly love the taste of the tiramisus!

Mini Cheesecakes

I was recently asked if I could make rolo cheesecakes. At the time, I hadn't offered them for sale, but I welcomed the challenge of trying something new. While I had made cheesecakes in the past and they had turned out really well, it had been a long time since I had made them, let alone with roll in them.

1st & 2nd attempt: On my first attempt, I didn't use cupcake liners in the tray as I was making mini cheesecakes, and as a result, they stuck to the pan and were very difficult to remove cleanly. For the second attempt, I used cupcake liners, but assuming they were non-stick, I omitted using cooking spray. Unfortunately, they once again stuck to the liners, and the batter was a bit too dense for my liking.

Last attempt: For the third and final attempt, I used liners in the cupcake tray and greased them, and this time they came out of the molds perfectly. I was thrilled with the result and committed to the order. The cheesecakes were perfectly shaped and had a light, not too dense texture that was just right.

If you're a fan of cheesecakes and Rolos, then these mini cheesecakes are perfect for you! You can now order them as regular cheesecakes,  Rolos mixed in, or opt for any other chocolate of your choice. To order you can dm @jayabakes on instagram :)

Upcoming Culinary Adventures: Sugar-Free Cookies and Diverse Ice Cream Flavours

Get ready for some exciting experiments! We're diving into the world of sugar-free cookies and really trying to perfect sugar-free desserts as well as exploring a range of unique ice cream flavours in the upcoming months. Stay tuned for sweet updates and delicious discoveries!

What sugar-free cookies should I bake next? Any flavours in mind? Leave me a comment letting me know :)

I recently tested out some sugar-free cookies made with pecans and dates. I sweetened them with natural maple syrup and dates, and they turned out just right—not too sweet, but still delicious. The pecans added a nice crunch to the texture, which I really enjoyed. In fact, I liked them so much that I've decided to offer them as a special request order on Instagram. You can find the option for special requests in my highlights. Don't hesitate to hop over to my Instagram and place an order for a special request item which is anything from brownies to sugar-free cookies, and even cakes. Your special requests are always welcome!

Umm... so despite realizing the maple syrup is in fact not sugar-free, the essence of the cookie will remain unchanged. Instead, I'll swap out the maple syrup for monk fruit sweetener and introduce maple extract to maintain that distinctive maple flavor.

Rest assured, the cookie will be sugar-free, ready for orders through Instagram. :)

Would love to hear your suggestions on what sugar-free dessert I should test out next! So leave your comments or even dm me on instagram, don't be shy!

Sugar-Free Cookies

By the end of the year, I hope to have a baking book filled with sugar-free recipes. So I will be testing a lot of sugar-free recipes especially cookies over the next few months, particularly in the upcoming weeks.

Next Baking Trials: Gluten-Free Desserts

This past weekend, I made gluten-free chocolate chip cookies using almond flour and Hershey's Chipits Mini Semi-Sweet Chocolate. Even those who can eat gluten loved them! I received feedback saying they were so good, especially with the almond flour. I'm considering adding these to my special request section, so feel free to direct message me on Instagram to place your order. If you'd like to order them now, I'd be happy to make them, though I don't currently have a picture to share. Before I officially post them, I want to test the recipe with gluten-free flour. Once I decide which version I like better, I'll share a picture on my Instagram.

Now available for purchase! Dm on instagram to order :)

I’ve fallen in love with the almond flour version, and I’m excited to announce that almond flour chocolate chip cookies are now officially available! They're irresistibly soft, with a rich, nutty flavour—perfect for anyone craving a delicious twist on a classic and also for those who are allergic to gluten. Try them!

Cakes

This past weekend, I whipped up Jaya Bakes’ chocolate cake and carrot cake, and they were a total hit! The carrot cake was practically inhaled, and the chocolate cake was half gone in no time. The best part? I kept them as naked cakes—no frosting fuss, just simple and stunning! Honestly, it saved me time, and they looked amazing (because let's be real, cake decorating isn't my superpower). Less work, more pretty? Yes, please!

So… should I start selling naked cakes? 🤔
